Shankarpali

Shankarpali is a traditional Mahrashtrian sweet snack made specially during Diwali. It can also be made spicy .
Here is what you will need
  • 1 cup oil
  • 1 cup milk
  • 1 1/4 cup sugar
  • a pinch of salt
  • Maida as needed
  • Oil for deep frying
Method:-
  1. In a big bowl , mix oil, milk and sugar and mix with hand till the mixture blends and the sugar dissolves
  2. Then add maida ( all purpose flour) slowly , mixing it as you add it.
  3. Add as much maida as needed to make it in a chapati like dough,
  4. Then roll out thick chapatis and cut then into small diamond shape.
  5. Deep fry these on a low flame till they turn light brown.

7 cup sweet

The name says 7 cup sweet. This is the simplest sweet that I have come across. All you need is 7 cups of the ingredients.
Here is what you need:-
  • 1 cup besan (chickpea flour)
  • 1 cup milk
  • 1 cup ghee
  • 1 cup grated coconut
  • 3 cups sugar.
Method:-
  1. In a heavy bottom pan , add the besan and stir it for 5 mins to get rid of the raw taste of besan.
  2. Then add all the remaining ingredients and mix well.
  3. Cook this mixture for 15 mins or till the mixture leaves the sides of the pan .
  4. Remove it in a greased thali and cut into diamond or square shapes.
Tips :-
  1. The cup can be of any measure,.
  2. The traditional recipe says 3 cups of sugar but I generally use only 2 1/2 cups for a less sweet taste.
