A banana bread with a kick of extra fiber from the oats and nuts. A perfect snack for the sweet tooth.
So here is what you need

- 1 cup all purpose flour
- 1 cup ground oats ( Grind the oats in a mixer /food processor)
- 4 Ripe bananas
- 2 large eggs
- 1/2 cup unsalted butter
- 1 tbsp milk
- 3/4 cup brown sugar ( I use C&H Cane Sugar)
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp Vanilla essence
- 1 tsp ground cinnamon
- 1/2 cup raisins
- 1/2 chopped nuts ( walnuts /pecans)
- 1/2 cup oats ( for sprinkling over the bread)
Method -
- Pre heat oven to 325 deg F. Grease a loaf tin with butter.
- Cream the butter and sugar till the sugar completely dissolves.
- Then add one egg at a time and whisk well.
- Mash the bananas well with a fork and add to the egg mixture.
- Sift the all purpose flour and baking powder and baking soda . Add the oats flour and a pinch of salt.
- Mix in the flour with the egg mixture and whisk well. Add milk .
- Now add the vanilla essence, cinnamon and give a final whisk.
- Add the raisins and nuts and mix well with a spatula.
- Pour the batter in a 9 inch loaf pan and level with a spatula.
- Sprinkle the oats over the batter.
- Bake for about 1 hour 10 min
